Hi! My name is Betsy Laakso and I’m the recent co-author of Cookies for Everyone and the Director of Research & Development at Enjoy Life Foods.

As the director of R&D (aka “Mad Food Scientist”), I am responsible for creating all of the delicious Enjoy Life treats. I am also the creative mastermind behind many of the delicious recipes on our packages and website.

I have more than 20 years of experience in the food industry, having worked at leading companies throughout the Chicagoland area. I also own my own confectionery company.

I have a degree in Dietetics and Food Science from Iowa State University. When I’m not making delicious allergen-friendly treats,  I enjoy life by spending time with my family, which includes my husband, two daughters who were adopted from China, 2 Siamese cats and 3 parrots. I am notorious in my neighborhood for my award-winning Halloween haunted house and pumpkin carvings.   I also enjoy entering local cooking contests, gardening and bird watching.
